The 2023 Pierre-Yves Colin-Morey Bourgogne Hautes-Côtes de Beaune Au Bout du Monde is a white Burgundy made from 100% Chardonnay, sourced from a high-altitude, southwest-facing slope in the Hautes-Côtes de Beaune with chalky-limestone soils. The wine is fermented with native yeasts and aged around 14 months in demi‑muid barrels with minimal new oak, followed by some time in stainless steel, preserving purity and site expression. It shows bright aromas of green apple, lime zest, white peach, delicate white flowers, and a touch of hazelnut. On the palate it is medium-bodied, lively and mineral-driven, with crisp acidity, a vibrant finish, and subtle stone-fruit and flinty undertones. It pairs beautifully with fresh oysters, grilled white fish, seared scallops, roast chicken with herbs, goat cheese, or light cream-sauced dishes.
