2023 Jean-Paul & Benoit Droin Chablis

The 2023 Jean-Paul & Benoît Droin Chablis is a classic white Burgundy from one of Chablis’s respected family domaines, where the Droin family has farmed vineyards on Kimmeridgian limestone soils for generations with a focus on sustainable practices and precise, low-intervention winemaking. The wine is 100 % Chardonnay, hand-harvested and fermented with native yeasts, then aged on fine lees in stainless steel and older oak to preserve freshness and reflect the chalky terroir.

On the nose it shows bright aromas of green apple, lemon zest, white flowers and a hint of wet stone or sea breeze minerality.

The palate is crisp and steely yet balanced, with vibrant acidity, citrus and orchard fruit flavors, a chalky mineral core and a clean, lingering finish.

This Chablis pairs beautifully with oysters and other shellfish, fresh seafood, sushi, goat cheese, or light poultry dishes with herb-driven sauces.
