The 2016 David Moret Saint‑Romain is a white Burgundy crafted by David Moret, a micro-négociant who selects small parcels from trusted growers and focuses on careful winemaking to express terroir. It is made from 100% Chardonnay grown in the Saint‑Romain appellation on the Côte de Beaune.
The grapes are gently pressed, fermented and partially aged in French oak to enhance complexity while keeping the wine’s natural character.
The wine shows pale golden color with aromas of white flowers, citrus, and subtle notes of brioche or butter. On the palate it is vibrant and mineral-driven, with bright acidity, a clean texture, and a lingering, elegant finish.
Suggested pairings include grilled or poached white fish, lightly sauced poultry, shellfish such as scallops, and soft, creamy cheeses.
