The 2015 Irancy “Palotte” from Domaine Gabin et Félix Richoux is a red wine from the hillside village of Irancy in northern Burgundy. The wine is crafted chiefly from Pinot Noir grown in the south‑facing Palotte lieu‑dit on Kimmeridgian limestone soils typical of the appellation. After being hand‑harvested, destemmed and fermented on indigenous yeasts, the wine undergoes a long élevage—typically 24 to 36 months—before release. On the nose, it reveals a bouquet of red cherries and wild raspberries layered with subtle spice and an undercurrent of earthy mineral notes. On the palate, the wine shows elegant texture, fine tannins, balanced acidity, and a refined savory finish that hints at more mature secondary notes. Having now matured, it pairs beautifully with roast duck, wild boar ragù, mushroom risotto, or aged Comté cheese.
