The Pinot Noir grapes are carefully de-stemmed and cold-soaked, with gentle pump-overs carried out once daily. Fermentation relies on native yeasts, and maturation takes place primarily in new oak, with the wines resting on their lees afterward. No fining, filtering, or cold stabilization is employed, which can result in a light sediment or the occasional tartaric crystal. Opulent and richly textured, with a subtle sweetness from their generous alcohol, these wines are renowned for their remarkable ability to age gracefully.
A more Burgundian style pinot, with notes of Chinese black tea, orange blossom, spiced black cherries and red fruit. Medium to full-body finished with a balanced acidity and elegance on the palate.
"The 2013 Pinot Noir Marcassin Vineyard doesn’t match the 2012, but it still offers a beautiful, complex, layered style that packs plenty of fruit as well as a more Burgundian style. Spiced black cherries, raspberries, strawberries, orange blossom, and flowery incense notes all emerge from the glass, and it’s beautifully balanced, medium to full-bodied, pure, and elegant on the palate.
