The 2007 vintage of the Domaine Rodolphe Demougeot Côte d’Or Chardonnay is a mature and elegant expression of white Burgundy crafted from 100 % Chardonnay in the Côte d’Or region of Burgundy.
The estate emphasises meticulous viticulture – hand‑harvested grapes, whole‑cluster pressing, and ageing in French oak barrels (with only a modest proportion of new wood) – allowing the terroir to shine through. On pouring, you’ll likely notice a deep golden colour and evolving aromas of mature white stone fruits (such as golden peach and dried apricot) layered with gentle notes of toasted almond or brioche, and a subtle mineral thread reflecting the limestone‑rich soils.
On the palate the texture is refined yet weighty, the acidity softened by age and harmonised with the oak integration; the finish echoes savoury nutty and mineral nuances, a hallmark of a white Burgundy that has sat in cellars. Given its age, this wine is likely at or approaching its prime and should be enjoyed soon.
For optimal enjoyment, serve it at approximately 12‑13 °C and pair it with dishes such as sautéed scallops in butter, chicken with mushrooms and light cream sauce, or an aged Comté or Gruyère cheese.
