Winemakers Notes:
Harvested from our Drake Estate, the 2010 Blanc de Noir has a gorgeous nose of Rainier cherry, apple and citrus zest with subtle notes of fresh pear and Mirabelle plum. This wine spent approximately 4 years en tirage, or in the bottle, on the yeast after completion of the bottle fermentation. This amount of lees contact helped develop the notes of toasted brioche and adds complexity to the overall feel. The very fine mousse in the mouth gives way to laser-like acidity and highlights minerals and tangerine zest elements and is punctuated with a Marcona almond nuttiness on the finish. The minimal dosage used at disgorgement gives precision and freshness to the palate in this compelling offering. Enjoy this wine as an aperitif or pair with a potato-crusted John Dory.
